Fresh green beans might be a forgotten vegetable to most, but it’s an absolute staple in our house! Breakfast, lunch, or dinner, we don’t discriminate around here 🙂 While many people associate green beans with a mushy canned Thanksgiving side, they taste like absolute perfection when they reach their peak ripeness in the spring and summer months!
With spring in full swing and green beans in abundance around here, they’ve been our “go-to” veggie on most nights. And no one is complaining!
I took my staple recipe lemon garlic skillet green beans, and added bacon. Sautéing some crispy bacon and tossing them with these lemon-garlic green beans is sure to be a hit with your family!
How to make Skillet Green Beans with Bacon:
This easy recipe only has a few simple ingredients:
- Bacon
- Green beans
- garlic
- lemon
- salt and pepper
That’s it!!
We start by sautéing the bacon in a cast iron skillet until they are done to your desired crispiness. Remove the bacon to the side, and reserve about one tablespoon of the bacon grease. Toss in the garlic to the hot skillet with grease for one minute, then add the green beans. Saute for 5-7 minutes, stirring and flipping a bit to make sure they are evenly cooked.
Squeeze lemon juice into the pan when the green beans are golden with a blistered look, yet still crispy. Now cover with a lid and reduce the heat. Let the juice from the lemon produce steam to soften the green beans. This will only be another 2-4 minutes.
Remove from heat and toss in the bacon.
Sprinkle with some salt and pepper and serve hot!

I love this as a side dish to anything grilled (like my grilled Rosemary Balsamic Chicken), steak, or for a holiday meal like my Thanksgiving Turkey.
I also love this as a brunch idea with some poached or sunny side up eggs!

Skillet Green Beans with Bacon
Ingredients
- 6 slices bacon
- 1 lb green beans washed and trimmed
- 2 large cloves of garlic minced
- 1/2 large lemon juiced
- Sea salt and pepper to taste

Begin by heating a large cast iron skillet to medium heat. Once hot, add the bacon (depending on your skillet you may need a bit of oil). Cook until desired crispiness, 3-5 minutes per side. Remove the bacon and grease, reserve 1 tablespoon of grease in the skillet. Bring it back to the stovetop burner.

Now add the minced garlic and cook for one minute, then toss in the green beans. Increase the heat to medium high. Continue to flip and stir using tongs. Cook for 5-7 minutes, or until the beans begin to blister.

Add the lemon juice to the pan and remove from heat. Cover the pan with a lid, and let sit for 2-3 minutes or until the green beans are crisp-tender.

Top the green beans with bacon and serve hot.
