Surprise!!! I decided last minute that I would help you along on this January Whole30 adventure. The husband and I have committed to another round of Whole30 this January (our 4th round), and so I started doing my own meal planning today. Then I thought, I need to share this plan with all of my favorite Whole30 friends: YOU!!!!
So here we go!!! Each week for the rest of the month, I will post a Whole30 menu complete with 1 make ahead breakfast recipe that can last you throughout the week. 2 lunch recipes, and 5 dinner recipes (2 of them will have leftovers). If you are only making for 1-2 people, you will probably have way too much food! These recipes work perfectly for my household of 2 adults, and 2 kids.
So let’s get started!!
Breakfast
So the breakfast recipe this week is my Hash Brown Breakfast Casserole. This one includes hatch chilis and is amazingly yummy!! You can make ahead and enjoy all week.
Lunch:
Two recipes for you here. They can both be made ahead. If you are extra hungry, eat both recipes for lunch. It will be super satisfying!
First up, is my Turkey Salad. This one is just like a traditional Chicken Salad, but uses leftover Turkey. You can easily swap in rotisserie chicken or shredded chicken breast. Whatever works! Best to serve with lettuce wraps.
Also, adding in one of my favorite lunches of Whole30: Creamy Carrot and Ginger Soup! This one can be made on the stovetop or Instant Pot and is easy to re-heat all week.
Dinner Recipes:
Two of the Five recipes in the dinner category are make ahead recipes (if you want), and also contain plenty for leftover dinners!
First, is Slow Cooker Butternut Squash Turkey Chili. This one tastes better with time. Meal prep on the weekend, or your day off, and enjoy the leftovers for dinner the next day too. So easy to set it and forget it!!
Next is Sheet Pan Shrimp Tacos. A perfect Taco Tuesday dinner. Serve in a bowl with Cauliflower Spanish Rice.
A great skillet meal, is this Skillet Chicken with Apple, Pancetta, and Pecans dinner. This one has that yummy salty/sweet combo, and works great served over Butternut Squash Mash.
Instant Pot Spaghetti is one that I make often. It’s my favorite version of a classic, I love how much it makes giving us leftovers, and it’s perfect for Whole30 served over spaghetti squash! This one also tastes better with time. So if you prep on the weekend, it will taste even better a couple of days later.
Finally, we have a reader favorite recipe: Thai Chicken Zoodle Soup! This one is veggie packed and has a creamy Thai curry flavor that everyone loves. It can also be made on the stovetop or in the Instant Pot.
