I’m back with another week of recipes to guide you through your 3rd week of Whole30! Breakfast, lunch, and dinner recipes are all included. A nice variety of flavors, plus the use of Instant Pot and the Slow Cooker! Be sure to scroll down for the grocery list at the bottom of the post.
Hey hey friends!!! How is everyone’s January going? Hope you all are enjoying the recipes so far!
This week’s Whole30 meal plan includes plenty of easy one pan recipes. We are going to be using the Instant Pot a few times (or the slow cooker), a few skillet meals, and one sheet pan meal. Don’t forget about the grocery list!
So let’s get started with this week.
Breakfast:
This week’s breakfast is going to be Artichoke Shakshuka. I LOVE this recipe so much. I do think it taste even more amazing with my Skillet Roasted Potatoes, but this one is good by itself. If you love runny eggs, then you’ll love this recipe! If you prefer more cooked eggs, no worries. You can easily cook the eggs a bit longer. To make this and re-heat throughout the week, I would double the recipe in the pan and store the sauce, and then make the eggs each morning.
Lunch:
This week’s lunch recipe is Avocado Chicken Salad with Bacon. Although it does turn a bit brown after a few days, it will last up to 4 days in the fridge. Serve this one with lettuce wraps.
Dinner:
First up, is simple Instant Pot Chicken Tinga! This works great for lunches too if you have leftovers. Super easy, and yes you can also make this one in the Slow Cooker.
Next, we have this one pan Roasted Sausage, Vegetable, and Apple Medley. This easy sheet pan meal is one that comes together quickly for a busy weeknight.
With cold weather, it’s a must that we include a soup! This Zuppa Toscana is another super easy dinner that can be made in the Instant Pot or Slow Cooker. Also a reader favorite!! Serve alongside an easy salad like this Broccoli Apple Rainbow Salad.
Creamy Mushroom Bacon Chicken with Cauliflower Rice Risotto is one of my absolute favorite dinners! This one has the elegance of a Sunday night dinner, but really is great for any night of the week.
And finally, we have this Beef and Veggie Taco Skillet. This skillet is topped with a Jalapeno “cheese” sauce that ties the whole recipe together and is so yummy!!
