Using an air fryer, you can have these perfectly seasoned breakfast sausage patties on the table in no time! Recipe requires only 10 minutes of hands on time to mix and prepare the sausage patties, and 10 minutes in the air fryer at 370 degrees farenheit. Paleo, Whole30, and Keto friendly!

Why use an Air Fryer for sausage?
Air Fryer Recipes have been on repeat in my house lately. My Air Fryer has quickly become my new favorite appliance and for so many reasons!
- It cooks everything faster
- I don’t get grease splatter on my stovetop
- It always gives me the crispy edges and taste I am looking for
With this in mind, I knew cooking sausage in my Air Fryer would be the absolute best method for an easy breakfast staple. It did not disappoint!
Homemade Sausage: healthier and tastier!
So……I’ve never been so excited about breakfast sausage. Mainly because I have spent my entire life just buying it at the store. I’ll be the first one to tell you that I do love me some breakfast sausage, but had no idea the possibilities of deliciousness when you actually make it yourself!!!
And the only reason I found myself in this predicament: I went to purchase my normal sausage for my kids who love it in the morning (and I need more ways to get them to eat protein for breakfast), only to find my favorite brand all out for about a week.
Sausage is tough you guys. As a nutritionist, I am very particular about ingredients we put into our mouths. Most brands and companies have nitrates and other processed ingredients that I don’t want my family eating.
So I made some…..

And the results were fantastic!! What the heck?? How did I not know that homemade sausage is so much better than the store bought crap? And that it was so easy? And way cheaper??
How to make Homemade Sausage Patties:
Spices, a mix of ground turkey and pork (see below under variations on why I like this combo), an air fryer, and 10 minutes is all you need to make these amazing sausage patties! Here are the simple ingredients:
- Ground Turkey
- Ground pork (of you can use all ground turkey– I do this often!)
- fennel seeds
- dry rubbed sage
- garlic powder
- paprika
- sea salt
- dried thyme
- real maple syrup (optional)
I tested a few different variations of this recipe. In one batch, I used maple syrup for a slightly sweet taste, but also made a batch without. You really can’t go wrong! Just toss the spices together with the pork/turkey mixture and roll into even balls. Give it a gentle press down and place in the air fryer.



You will most likely have to do these in two batches of one layer cooking in the air fryer. You don’t want to overlap or crowd the air fryer.
Storing/Reheating:
These make such a good make ahead breakfast option! That’s my favorite part about these sausages: meal prep!
The best way to store, is to freeze whatever you don’t eat after they are cooked. Place in the microwave for one minute, that’s it! Perfect for those busy weekday mornings.

Variations:
- I include ground turkey for nutrition reasons. I love the additional amino acids you can get in turkey that are lacking in other animal proteins (i.e. tryptophan). Such a great way to vary up the nutrients! Feel free to use all turkey, or substitute ground chicken. The pork adds in a bit more fat, but I make these often and have almost switched to all ground turkey.
- For a Keto/Whole30 variation: omit the maple syrup. You will get a nice spiced version.
- To make these extra spicy, add in 1/2 tsp cayenne pepper!
Can you make these in the oven or stovetop?
You can definitely make these in the oven, I prefer that method over the stovetop. Heat the oven to 400 degrees F and bake for 20 minutes. Flip halfway through cooking. I also use my air fryer setting on my oven to get the sausage
Homemade Air Fryer Breakfast Sausage Patties

Equipment
- Air Fryer
Ingredients
- 1 lb ground pork*
- 1 lb ground turkey
- 2 tsp fennel seeds
- 2 tsp dry rubbed sage
- 2 tsp garlic powder
- 1 tsp paprika
- 1 tsp sea salt
- 1 tsp dried thyme
- 1 tbsp real maple syrup**
Instructions
- Begin by mixing together the pork and turkey in a large bowl. In a small bowl, mix together the remaining ingredients: fennel, sage, garlic powder, paprika, salt, and thyme. Pour spices into the meat and continue to mix until the spices are completely incorporated.
- Spoon into balls (about 2-3 tbsp of meat), and flatten into patties. Place inside the air fryer, you will probably have to do this in 2 batches.
- Set the temperature to 370 degrees, and cook for 10 minutes. Remove from the air fryer and repeat with the remaining sausage.










These are great. I only used 1lb of 97/3 ground turkey, and used half of the seasonings since I was not using the ground pork. I did use the maple syrup. Using 3 Tbsp servings, this made 9 patties for me, which just fit in my Xl air fryer. I cooked them ahead of time, and re heating at 350° for 3 minutes the patty was juicy, and the flavors were fabulous 👌. I will definitely be making these again. They are so much better than the frozen turkey patties I had been previously buying.
We don’t eat pork so what other ground meat would you use with the turkey instead of the pork?
I mostly only use ground turkey in this recipe. I hardly ever make it with ground pork anymore! You may want to double the spices and seasonings to make it more flavorful this way. Hope this helps!

You are right. But please read the notes, and the asterisk next to the maple syrup and you will see that it is listed as optional and only for those not following a Whole30 or Keto diet.
Silly recipe lady, that would require reading…… but seriously, I like the concept, especially mixing pork & turkey – not 100% sure on the spice mix you’re suggesting, might read some other sausage recipes + ingredients lists on sausage (store-bought) that I know I like, but thx so much for the inspiration.
