Breakfast lovers looking for some easy and unique high protein options for your busy mornings, I’ve got you covered! These French Toast Muffins with high protein are a recipe I’ve been working on for a few months. After some experimenting, and many test runs, I can confidently say: Nailed it! Serve with a side of my homemade sausage patties, and a bowl of berries for a nutrient dense breakfast.

How to make French Toast Muffins

Start by gathering your ingredients

  • Bread: options here include brioche bread, sourdough, or any grain/seed bread is a great option! You will need an entire loaf.
  • Eggs and egg whites: mixture here to get in more protein
  • Milk: any type such as whole milk, skim, oat milk, etc.
  • Protein powder: I use vanilla whey protein powder here, but feel free to use your own personal favorite. Unflavored collagen protein powder can also work here as it doesn’t taste like anything!
  • Cinnamon and maple syrup: for the classic French Toast flavor!

This recipe comes together so easily! Cut up your bread into cubes. Whisk together eggs, egg whites, milk, protein powder, syrup, and cinnamon. Pour on top of your bread cubes. Spoon the bread/egg mixture into a prepared muffin pan. Bake for 20 minutes!

Tips and Tricks!

You can toast the bread cubes in advance before adding the egg mixture. I think they are delicious either way, but with softer bread like brioche, this is helpful so the bread doesn’t fall apart. Serve with some powdered sugar on top, or a little syrup. They are also delicious plain! I freeze mine and microwave for 1 minute before eating.

Ingredients 

  • 1 loaf Bread*
  • 4 large Eggs
  • 1 cup Liquid Egg whites
  • 1 cup Milk
  • 1/2 cup Protein powder**
  • 2 tbsp Maple syrup, (+ more for serving)
  • 3 tsp Cinnamon
  • 1/2 tsp Sea salt

Instructions 

  • Preheat the oven to 375 degrees F. Lightly grease 2x 12 cup muffin pans and set aside. Cut your bread into large cubes. If you are using a very soft bread (like brioche), you may want to toast the cubes in the oven for 5 minutes prior to adding the liquid mixture.
  • In a large bowl, whisk together eggs, egg whites, milk, protein powder, maple syrup, cinnamon, and sea salt.
  • Toss in the bread cubes and stir gently to coat the bread cubes evenly. Spoon the mixture until muffin cups are approximately 3/4 – all the way full among the prepared pans. You should get somewhere between 20 – 24 muffins.
  • Transfer to the oven and bake for 18 – 20 minutes, or until tops are golden brown and muffins are puffy. Remove and let sit for 5 minutes to cool.
  • Sprinkle with powdered sugar (optional), or serve warm with a little butter and maple syrup.

Storage tips!

  • These store well in the freezer for a few months! This helps them to keep fresh. Pull out one at a time from the freezer and microwave for 1 minute to serve.

Notes

*You can use any type of bread here. If pre-sliced, you will need around 20 slices of bread. If using a sourdough loaf, cut the entire loaf into 1 inch cubes. For softer bread like brioche, it’s best to toast in the oven at 375 for 5 minutes or so before tossing in with the liquid egg mixture. 
**I use vanilla whey protein, but have also used a plant based protein (Ka’Chava) that was chai flavored. Choose your favorite protein powder! Collagen protein powder that is unflavored also works well here.

    Sounds yummy. Question – can I sub whole eggs for egg whites? Does it change the outcome?

      It shouldn’t be a problem. I would add 2 eggs in place of the egg whites.
