A Festive Twist on a Classic Charcuterie Board

Charcuterie boards have become a holiday staple around here, and I love finding creative, seasonal ways to present them, like in my Christmas Tree Charcuterie Board. This Thanksgiving version takes it up a notch! With a mix of savory and sweet items, it’s fun to assemble and even more fun to eat. Whether you’re hosting a big family gathering or bringing a dish to share, this turkey-shaped board is sure to impress.

What You’ll Need for This Charcuterie!

The beauty of this board is that you can customize it with whatever ingredients you love most. Here’s what I used to create mine:

  • Cheeses: Slices of cheese or squares work best. I used a mix of cheddar and gouda.
  • Cured meats: Salami and pepperoni arranged as the turkey “feathers”. You can also use prosciutto.
  • Fruits: I used a pear for the turkey body. I also added blackberries, apple slices, and pomegranate arils for pops of color. Green grapes would also work great here in place of cucumber.
  • Crackers and nuts: To fill in the spaces and add crunch. I used Trader Joe’s truffle marcona almonds.
  • Extras: Olives, pretzels, and even pickles would work great. I used capers for the turkey eyes, but olives would also work! Finally, I added sprigs of rosemary for color and for turkey legs.

How to Assemble Your Turkey Charcuterie Board

  1. For best results, use a circular board. Start with the turkey body. Slice your pair in half lengthwise, and place the pear skin side down on the board.
  2. Create the feathers by fanning out layers of meats, cheeses, and fruits around the pear. Be sure to alternate colors and textures! You can fold the salami in half twice and stand it up. All tucked in the salami will stay in place. It’s best to save have at least one row of crackers at the very top.
  3. Add the face of the turkey by using small cut circles from cheese for the eyes. You can also place a sliced in half olive or caper on top. An almond or small triangle cheese shape nose belongs right below. Place rosemary sprigs under the body for legs.
  4. Fill in the gaps by tucking in nuts, sprigs of rosemary, extra fruit like pomegranate to make the board look full and inviting.

Ingredients 

  • 1 large pear
  • 1 cup marcona almonds
  • 8 oz small cheese slices, (cheddar and gouda)
  • 1 lb cured meats such as salami and pepperoni
  • 2 medium apples
  • 1 medium cucumber*
  • 1/2 cup pomegranate arils
  • 4 cups crackers, (about 12 oz)
  • sprigs fresh rosemary

Instructions 

  • Prepare your apples and cucumber by slicing.
  • Start with the turkey body by slicing the pear in half lengthwise. Place at the bottom of a round board cut side down.
  • Create the feathers of the turkey by fanning out layers of nuts, salami and pepperoni, cheese, cucumber, and fruit alternating textures and colors. The salami can be folded in half twice and will stay "folded" if standing up and wedged in with others. Have the last layer at the top contain crackers, you can also have another layer of crackers in the middle.
  • Create the face of the turkey by cutting small circles of cheese for the eyes and a triangle for the nose. You can finish the eyes with a slice of caper or olives. Place rosemary sprigs under the pear for the legs.
  • Fill in the gaps of the board by tucking in more crackers, rosemary sprigs, nuts, and sprinkling pomegranate arils all over to make the board look full and inviting.
