Cauliflower Crust: a low carb pizza option!
I am convinced that cauliflower has super powers. There are no limits to the amount of side dishes and even main courses you can make with this nutrient dense veggie! It seems to magically make delicious low carb and high fiber recipes in the most natural way.

Is there anything it can’t do? At this point, I think no. Being a nutritionist and the breakfast connoisseur that I am, I have always been on the lookout for healthier ways to enjoy my eggs. I have loved eating them with Cauliflower gnocchi lately, but when I came across Cali’Flour pizza crusts and flat breads, I knew I hit the jackpot with a new breakfast idea.
At this point in my mostly Gluten-Free life, pizza with the cauliflower crust is the only way I can digest one of my all time favorite foods. When I got a hold of Cali’Flour crusts and all of the fun flavors, I was really excited about the simple fresh ingredients. Made with loads of cauliflower, mozzarella, egg whites, and spices– that’s it!
Cali’flour Pizza Crust for breakfast:
Instantly the idea of adding avocado and eggs came to my head. Avocado toast has always been a favorite breakfast food of mine. Could I use these fun little flat breads as toast? Oh yes. And it’s amazing.
I have seriously been loving my breakfasts over the past week. Playing around with Cali’flour crusts has brought new life to my breakfast routine! I am loving the variety of flavors in their crusts and flatbreads: Spicy Jalapeno (my favorite), Original Italian, Sun-dried Tomato, and Sweet Red Pepper.
How to make Breakfast Pizza Flatbreads:
I made a few different variations of these flatbreads pizzas. The first variation was more of a pizza and used cheese with bacon, eggs, and some green onion.
Some pro-tips when making the larger pizzas and how to make it breakfast style:
- Always start with the flatbread straight out of the package while it’s frozen.
- When you go to pre-heat the oven, place the empty pan in the oven so that it gets hot.
- You want to bake the crust in the oven at 400 degrees F with the venting pan before adding in toppings. Then let it cool before adding the toppings.
- I cooked the bacon ahead of time. I then topped the pizza crust with cheese, bacon, and made two holes to add in the eggs.
- Return the pan back to the oven and up the temperature to 425. Bake until the egg white sets. This took me 5-6 minutes.
Air Fryer Variation:
The other variation I tried was just with the mini flatbreads. I treated this one like Avocado toast and made it in the Air Fryer.
I placed 2 flatbreads straight into the air fryer basket from frozen. I cooked them at 390 degrees F for 7 minutes. While they were cooking, I made two eggs in a saucepan.
After cook time was complete, I smothered avocado on top. Then added chopped tomatoes, seasoning, and arugula.
You can easily eat it from there, but add in the egg for more protein!
Versatility of Cali’flour crusts:
Besides the pizza and avocado toast, the possibilities with Cali’flour crust are endless! The flatbreads would make a great taco shell, or even a sandwich or wrap.
Another option is to cut each crust into multiple squares, then use a cracker for a dip or for some crunch with a salad.

Flatbread Breakfast Pizza
This low carb and keto breakfast pizza is made on top of a Cauliflower flat bread! Simple, tasty, and a nutritious breakfast.
Ingredients
- 1 Cali'Flour Pizza Crust (frozen)
- 1/3 cup Mozarella cheese
- 2 slices bacon
- 2 large eggs
- 2 tbsp green onion
- sliced tomatoes (optional for garnish)
- sliced avocado (optional for garnish)
Instructions

Preheat the oven to 400 degrees F. Place a venting pizza pan in the oven to heat while oven is preheat. Once oven reaches 400 degrees, remove the pan and place the frozen pizza crust on top.

Return to the oven and bake for 10-12 minutes. Remove from the oven and let the crust cool. Bump the temperature up to 425 degrees.

Meanwhile, make the bacon to desired crispiness. I cooked mine a little less than normal, since it will return to the oven to get extra crispy.

Once crust has cooled, sprinkle with cheese. Create two spaces (or wells) in the cheese and place the raw eggs in each hole. Sprinkle the pizza with bacon. Transfer to the oven.

Bake for 5-6 minutes or until egg whites are set. Remove from oven and sprinkle with green onion. Top with sliced tomatoes and avocado if using.
