When summer hits, I’m all about dinners that keep the kitchen cool, come together fast, and deliver big on flavor. These Grilled Shrimp Skewers with Pineapple Mint Marinade are a warm-weather favorite in our house! It’s a delicious option to enjoy while rotating through your favorite grilled meals of the season.

As a nutritionist, nothing makes me happier than a bright and vibrant dinner that is loaded with antioxidants, protein, healthy fats, and fiber. This is so easy to do with using the grill with a delicious marinade!
Summertime means all dinners must be enjoyed without heating up the kitchen. The grill is our most used cooking appliance during these few months!! I absolutely love a grilled dinner, especially anything that involves an amazing marinade, and fresh veggies.
Let’s talk about the real MVP here: the Pineapple Mint Marinade. It’s the kind of sauce that tastes like sunshine—sweet, tangy, herby, and a little salty. Made with just a few simple ingredients, it brings so much life to shrimp, chicken, steak, or even salads. I always make extra to keep in the fridge—it doubles beautifully as a vinaigrette or quick sauce for other protein
These skewers are super versatile. I like using a mix of shrimp, pineapple chunks, bell peppers, and red onion but you can totally make them your own. Zucchini and mushrooms also grill up beautifully and add a nice texture. After a quick marinate (just 20 minutes is enough, but you can go up to 8 hours), they’re ready for the grill. Pineapple Mint Marinade:
I mean, do I need to say more? This combo of simple ingredients and flavors is CRAZY delicious. Go ahead and double the batch. Save it for other meals like salads or a sauce on meat. You’ll thank me later.
We’ll use a food processor or blender and pulse until nice and smooth.


How to make Grilled Shrimp Skewers:
I use metal skewers for my kabobs, but you can use wooden. Be sure to soak them in water for 30 minutes prior to using.
For the shrimp skewers we will need:
- Peeled and deveined shrimp
- bell pepper
- pineapple
- red onion
You can adapt these veggies/fruit to your personal taste! Mushrooms work well here and so does zucchini. Cut up whatever veggies you plan on using, and thread through the sticks. Marinate for as little as 20 minutes, or as long as 8 hours in 1/2 of the pineapple mint dressing.

Shrimp cooks lightning fast—just 2–4 minutes per side on a hot grill is all it takes. If you’re using wooden skewers, don’t forget to soak them in water for about 30 minutes beforehand to prevent burning.
No grill? No problem. You can easily bake these in the oven at 425°F for 7–9 minutes. Still quick, still flavorful, and still totally delicious.

Serving:

Grilled Shrimp Skewers with Pineapple Mint Marinade

Ingredients
For the Marinade:
- 1 cup diced fresh pineapple
- 1/4 cup loose fresh mint
- 2 cloves garlic
- 2/3 cup olive oil or avocado oil
- 1/4 cup apple cider vinegar
- 3 tbsp lime juice
- 3 tbsp coconut aminos or GF Tamari Soy Sauce
For the Skewers:
- 2 lbs peeled and deveined shrimp
- 1 red bell pepper, cut into 1 square inch slices
- 1 orange bell pepper, cut into 1 square inch slices
- 1/2 red onion, cut into 1 square inch slices
- 2 cups pineapple chunks
- salt and pepper to taste
Instructions
- Make your marinade by combining all marinade ingredients into a food processor or blender. Pulse until smooth. Divide the marinade in half, reserving some for serving. Set aside.
- Prepare your skewers by threading the shrimp and veggies in any order you like. You can also do skewers with all shrimp, and some with all veggies. Place the skewers in a large container or bag, and pour 1/2 of the the marinade on the prepared skewers. Marinade for as little as 15 minutes, or as long as 1 hour.
- Prepare your grill. Heat to a medium high heat, or 450 degrees. Once heated, place skewers on the grill and cook for 3-4 minutes per side. Remove from heat. Let cool for a few minutes before serving. Pour the reserved marinade over the shrimp and serve. Salt and pepper to taste.

I have tons of white nectarines so I will sub the pineapple with those. Will let you know how it turns out. Hoping they have enough acid in the marinade
