One true statement about me as a content creator: Salads are my favorite to create and photograph! As a nutritionist, I eat salads daily. I love the way salads pack in nutrients: healthy fats, fiber, and antioxidants. But it’s also easy to top with protein for a complete meal! Vibrant and colorful salads with a tasty homemade salad dressing are always impressive and delicious.
How to make the perfect salad
To make the perfect salad, we need to follow these step:
- Base: If doing a green salad, I always like my base to have at least 2 different types of greens! I love to mix up my nutrients this way, and I also like a variety in texture. For example, romaine is more crispy than a softer spinach or bib or red lettuce. You can also use a vegetable, grain, or legume as a base! Hello Cauliflower Rice, chickpeas, or Broccoli.
- Texture: adding in texture is an absolute must. This includes really crispy vegetables like bell pepper, radish, celery, carrots, etc. ALSO, be sure to add in another element of crunch! My favorite is some type of nut like pumpkin seeds, sunflower seeds, or chopped almonds. You don’t need croutons if you vary up your textures. Finally, depending on the salad, a juicy fruit can also add in just the right texture and flavor.
- Dressing: my favorite part! Homemade dressings are what make or break a good salad. I love to create a deliciously tangy dressing. Sometimes the tang will include some fresh herbs (hello cilantro or basil). You can also create a creamier dressing with a few different types of ingredients (other than mayo). My personal favorites are tahini or avocado!

30+ Quick and Healthy Salad Recipes: Cucumber Tomato Salad
This classic Cucumber Tomato Salad is just like summer in a bowl!! You’ll love the fresh taste of cucumbers and tomatoes, along with a simple homemade Italian dressing. This quick and easy salad takes only about 15 minutes to make.
Ingredients
- 1 large cucumber
- 2 cups cherry tomatoes
- 1/2 medium red onion
- 1/3 cup avocado oil or olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon Mustard
- 2 tsp Italian seasoning
- pinch of salt + more to taste
- 1/4 cup chopped fresh basil
Instructions

Prepare your veggies: Slice your cucumber (peeled or unpeeled) into slices, then half each slice. Quarter the cherry tomatoes, and thinly slice the red onion. Pour into a medium to large size bowl

Using a container with a lid, combine the oil, vinegar, dijon mustard, Italian seasoning, and a pinch of salt. Shake until nice and smooth. Pour on top of the cucumber/tomato mixture.

Season with additional sea salt and top with fresh basil to serve.
