Pomegranate Avocado Salsa is the perfect healthy snack that everyone will love! Pomegranates and avocado are dressed up with fresh cilantro, lime, and jalapeño for a refreshing dip that is also festive for the holidays. Paleo, Whole30, and Vegan!

 

I have combined my two favorite fruits into one of my favorite foods: salsa. I made this last night for my book group as an appetizer leading into our main meal, and we were all devouring it.

Can I just say, I am in love with everything about this recipe! I mean, first it’s beautiful. Avocado and pomegranate are super easy to photograph. And it’s so easy to make:

 

Second, it’s a nutritious bowl of yumminess!! And finally, it tasted down right amazingly delicious. I love the tart taste of the pomegranates with the cilantro, lime, and salt. The texture of avocados was a super fun surprise, and paired well with the crunchy pomegranate seeds.

Nutritional Benefits of Pomegranates:

Pomegranates should be making their way into your diet now that they are out in full force in the supermarket. Pomegranates are packed with vitamin C, polyphenol antioxidants and is superior to most fruits when it comes to antioxidant count! This helps to defend our bodies against oxidative stress, and even helps to combat inflammation.

Pomegranates are known for being a heart healthy food by improving blood pressure, and even reversing plaque growth in the arteries. Finally, the seeds are packed with fiber.

My family loves to munch on pomegranate seeds, and I have putting them in my kids lunch boxes daily! Other ways we enjoy them are in salads, are oatmeal, and yogurt. But finally, we let them make an appearance for our favorite day of the week: TACO TUESDAY!!! How you might wonder? With this salsa of course!!!

So get on it!! So simple to make, and even more simple to eat. I promise everyone will absolutely devour this Pomegranate avocado salsa at the next party. I am also considering tossing in some quinoa for a complete and oh so delicious lunch! With the holidays just around the corner, I can’t wait to serve this as a light dip to combat the holiday heaviness!

Pomegranate Avocado Salsa

Ingredients

  • 2 pomegranates sliced and seeds removed (about 2 cups)
  • 1/3 cup red onion diced
  • 1/3 cup chopped fresh cilantro
  • 1 jalapeno de-seeded and chopped
  • 1 avocado* cut into small chunks seed removed
  • Juice of 1 lime
  • 1 tsp sea salt

Instructions

  1. Toss together pomegranate seeds, red onion, cilantro, jalapeño and avocado. Stir gently to combine.
  2. Toss in fresh lime juice and top with sea salt. Serve immediately!

    This looks amazing. 5 stars based on looks as I haven’t made it yet but plan too. What would you serve this salsa with?

      You can do a lot with it! It works great as a dip with chips or crackers. Also can be served with greens as a salad, or on top of grilled or baked protein (best with salmon or chicken).

    I made this for Christmas, I added 1 mango since I only had 1 pomegranate. It was awesome. I think I will make again for New Years

      You can mix everything together with the exception of the avocados! I would save those for the last minute ????
