As a nutritionist, I love combining foods that are not only delicious but fun to serve. I made this last night for my book group as an appetizer, and we could not stop devouring it!

Can I just say, I am in love with everything about this recipe! First, it is beautiful. The red pomegranate seeds and green avocado are super easy to photograph and make for a festive presentation!! Second, it is incredibly easy to make. Just toss everything together and you are ready to wow your guests. And finally, it tastes amazingly fresh and flavorful!!

Pomegranate Avocado Salsa

Ingredients 

  • 2 pomegranates, sliced and seeds removed (about 2 cups)
  • 1/3 cup red onion, diced
  • 1/3 cup chopped fresh cilantro
  • 1 jalapeno, de-seeded and chopped
  • 1 avocado*, cut into small chunks seed removed
  • Juice of 1 lime
  • 1 tsp sea salt

Instructions 

  • Toss together pomegranate seeds, red onion, cilantro, jalapeño and avocado. Stir gently to combine.
  • Toss in fresh lime juice and top with sea salt. Serve immediately!

    This was great when I made it for Christmas! Next time I’ll definitely add another avocado, and maybe some jalapeno seeds or cayenne for a little heat. So good!

      You can mix everything together with the exception of the avocados! I would save those for the last minute ????

      You can do a lot with it! It works great as a dip with chips or crackers. Also can be served with greens as a salad, or on top of grilled or baked protein (best with salmon or chicken).
