Pomegranate Avocado Salsa

Ingredients
- 2 pomegranates, sliced and seeds removed (about 2 cups)
- 1/3 cup red onion, diced
- 1/3 cup chopped fresh cilantro
- 1 jalapeno, de-seeded and chopped
- 1 avocado*, cut into small chunks seed removed
- Juice of 1 lime
- 1 tsp sea salt
Instructions
- Toss together pomegranate seeds, red onion, cilantro, jalapeño and avocado. Stir gently to combine.
- Toss in fresh lime juice and top with sea salt. Serve immediately!

This was great when I made it for Christmas! Next time I’ll definitely add another avocado, and maybe some jalapeno seeds or cayenne for a little heat. So good!

You can mix everything together with the exception of the avocados! I would save those for the last minute ????

You can do a lot with it! It works great as a dip with chips or crackers. Also can be served with greens as a salad, or on top of grilled or baked protein (best with salmon or chicken).
