I just have to tell you all, very little cooking has been happening in my kitchen the last few months. It’s been a crazy busy summer of travel, baseball, and more travel. But I am also here to tell you, the little time I was able to whip up a delicious and easy dinner, this Ground Turkey and Green Bean Stir-Fry was one I made more than a few times!
And I’m a bit obsessed! It’s healthy, it’s easy, it’s loaded with a tangy Asian flavor, and even has a bit of a spicy kick. Also, it’s ready in less than 20 minutes! As a nutritionist, this is everything I want for a busy weeknight. Bonus, my kids love it too!
How to make Turkey and Green Bean Stir-Fry:
This recipe is all about simplicity. The simplest of dinners are often the best and the ones you’ll want on repeat! Here are the ingredients you need (see recipe card below for full instructions and ingredients):
- Ground turkey
- Fresh green beans
- Minced garlic
- Fresh ginger
- Coconut aminos (can also substitute GF Tamari Soy Sauce)
- Rice vinegar
- Sesame oil
- Chili garlic sauce or sriracha
Just a few easy steps to make this dinner! Start by sauteeing the green beans in cooking oil (I use avocado) and minced garlic. After 5-7 minutes, remove from pan, but keep the pan hot. Brown the turkey with freshly chopped ginger. Once complete, toss in the green beans. Make a quick sauce by stirring together coconut aminos, rice vinegar, sesame oil, and chili garlic sauce or sriracha.

Ground Turkey and Green Bean Stir Fry
20 minutes is all you need to make this super easy Ground Turkey and Green Bean Stir-Fry! Just a handful of simple ingredients, and the whole family will be enjoying this dinner in no time.
- 1 lb Green beans (cleaned and trimmed)
- 2 tbsp Avocado oil or olive oil (divided)
- 2 cloves garlic (minced)
- 1.5 lbs ground turkey
- 2 tbsp finely diced fresh ginger
- 1 tbsp sesame oil
- 1/3 cup coconut aminos*
- 3 tbsp rice vinegar
- 2 tsp chili garlic sauce or sriracha
Heat a large skillet to medium high heat. Once hot, add 1 tbsp avocado oil. Turn down the heat slightly and toss in the green beans. Saute for 5-6 minutes, tossing occasionally. Add in the garlic, cook for another 1-2 minutes, then remove green beans to the side (keep the pan hot and add back to the stove).
Add the remaining avocado oil to the pan with the fresh ginger and ground turkey. Cook the turkey while breaking up with a wooden spoon, and cook until no longer pink (about 5-7 minutes).
While turkey is cooking, in a small bowl whisk together sesame oil, coconut aminos, rice vinegar, and chili garlic sauce.
Toss the sauce and green beans into the pan with the turkey. Give it a quick stir and cover with a lid. Cook for an additional 2 minutes.
Serve hot with rice or cauliflower rice.
*You can use GF Tamari Soy sauce in place of coconut aminos, but add in 1 tbsp of coconut sugar for a bit of sweetness.
