So if you’ve stuck with your Whole30 plan, this is the last week!! How exciting! Are you noticing some bigger changes in the way you are feeling?
I just want to start with a few changes that I’ve noticed. The biggest one is SLEEP. I’ve always loved my sleep and ensure that I am laying in bed for at least 8 hours per night. Most of the time, I read before going to bed, and then sleep for about 7.5 hours. I’ve noticed that my sleep feels much DEEPER. I am actually getting into the final stage of sleep, which has me feeling more rested and energetic throughout the day. It’s definitely noticeable.
One of the reasons for this deep sleep is the complete elimination of sugar and alcohol. Even 1 drink can disrupt your sleep at night, and while you initially fall asleep easily, alcohol prevents you from going into a deep sleep. Sugar is very similar!! Especially eating sweets or high carbohydrates before going to bed prevents you from getting that deep sleep.
I just wanted to share those with you! It makes me realize just how important this is to me, and how much more mindful I need to be moving forward. Even though I have a very nutritious diet, I can always make improvements and think twice about sugar and alcohol.
Anyhow, just wanted to share!…….. Let’s get on with the meal plan this week!
Breakfast:
This week’s breakfast is Instant Pot Breakfast Casserole. I love that this recipe comes together so easily with the set it and forget it simplicity of the Instant Pot! Make ahead and re-heat throughout the week.
Lunch:
I have 2 lunch recipes for you. The first one is my Paleo Italian “Pasta” Salad. This one is loaded with all of those pasta salad goodies you love (tomatoes, artichokes, prosciutto, salami, bell pepper, Italian dressing, and more!). This one can be prepped on the weekend, but just separate the zucchini noodles from the dressing so it doesn’t get soggy.
I am also adding in this Instant Pot Broccoli Potato Soup!! I thought it would be helpful to include a soup, in case you wanted something warm and comforting for the winter weather.
Dinner:
We’re starting out dinner recipes with Chicken Satay Meatballs. I LOVE this recipe!!!! The nutty satay sauce is amazing. You can use ground turkey or beef in place of the ground chicken, and I think you’ll love this one. Serve over spaghetti squash.
Next up, Instant Pot Turkey Taco Soup. This soup is loaded with taco flavor you love. It’s low in fat, which means you will want to add in some fat so that you’re not starving a few hours after eating it! Adding avocado is a great idea, or serving alongside a salad. My Winter Salad with Blood Orange Vinaigrette is a good one!
Next up is Chimichurri Steak and Pepper Skillet, a one pan meal that comes together so quickly. You can serve along Spanish Cauliflower Rice or baked potatoes.
One of my absolute favorite Indian dishes, is my Slow Cooker Chicken Korma. This dinner is creamy and dreamy, with a flavorful sauce that you will absolutely love! This one tastes great over spiralized potatoes or Cilantro Lime Cauliflower Rice.
And finally, this super easy Instant Pot Lemon Pepper Salmon! This dinner comes together so quickly. Serve alongside my Creamy Lemon Skillet Brussels Sprouts
