Summer time is one of my most favorite times of year to eat. As a nutritionist, I naturally gravitate toward summer produce and hearty salads. I look forward to the abundance of delicious vegetables, in season fruits, seasonal salads, and grilling out on my deck!

Summer is also a time where I often pack lunches and dinners to go to the pool, and hang out with friends. Sometimes I get the, “what the heck should I make tonight?” mentality. I am being honest here, this post is just as much for me as it is for you. One place to put all of my favorite summer recipes!!

Just as a note, I did not include any breakfast recipes in here. However, my favorite breakfast during the summer is a refreshing smoothie because it keeps me full for hours. You can try one of my 3 Hormone Balancing Smoothies if you are a smoothie lover like me.

50+ Easy Paleo Summer Recipes: Strawberry Basil Chicken

Using a skillet or grill, this Strawberry Basil Chicken is bringing out the best of summer produce in one delicious dinner! This savory and sweet combo is loaded with flavor and just a handful of ingredients. Only 20 minutes is all you need!

Ingredients 

  • 3-4 large chicken breast
  • 1-2 tbsp avocado oil , (or olive oil)
  • 3 cloves garlic , (minced)
  • 3 tbsp balsamic vinegar, + more to taste
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 cup chopped fresh basil leaves

Instructions 

  • Begin by heating a large skillet to medium heat.
  • Prepare your chicken breasts: you may need to pound the breast to make them a bit thinner, mine were approximately 1 inch. While the skillet is heating up, marinate the chicken with garlic and balsamic vinegar.
  • Add oil to the pan. Cook for 3-5 minutes per side (until golden brown, but cooked through). Set aside.
  • Meanwhile, prepare the topping. Toss together strawberries and basil. Top each chicken breast with strawberry mixture, and salt and pepper to taste. Add additional balsamic vinegar if desired. Serve immediately.
